- 3 eggs (separated)
- 23 cup sugar
- 14 cup sifted potato starch
- 12 cup orange juice
- 1 34 cups ground blanched almonds
- 12 teaspoon cinnamon
- potato starch (for dusting pan)
Directions

1Preheat oven to 325 degrees.

2Beat egg yolks and sugar until mixture is light and fluffy.

3Alternately beat in the potato starch and orange juice.

4Add almonds and cinnamon and mix well.

5In a separate clean bowl, with clean beaters, beat the egg whites until stiff but not dry.

6Fold beaten egg whites into the egg yolk mixture.

7Grease an 8-inch springform pan and dust with potato starch.

8Bake at 325 degrees for 35 to 40 minutes.

9Cake is done when a toothpick inserted into the center comes out clean.

10Serve with a fruit salad.
