Almond Caramel Apples

- 2 c. sugar
- 2 Tbsp. butter
- 1 tsp. vanilla
- 1 c. chopped almonds
- 1 c. corn syrup
- 1 c. light cream
- 8 to 12 apples
Directions

1Combine sugar, syrup, butter and cream.

2Stir over low heat until sugar is dissolved.

3Boil over moderate heat to very firm ball stage (250°), stirring occasionally to prevent scorching. Remove from heat and stir in vanilla.

4Insert skewer into each apple and dip into syrup.

5Roll in chopped almonds (roasted). Makes 8 to 12 apples, depending on size.
