- 2 envelope unflavored gelatin
- 1/2 cup water
- 3 cup whipping cream
- 1 cup sugar
- 4 eggs, beaten
- 1 tsp (I add a little extra) almond extract
- 1 *optional* garnish- chocolate curls and/or raspberries
Directions

1In a saucepan sprinkle gelatin over water.

2Let stand 1 minute.

3Stir in cream and sugar.

4Cook over medium-low heat for 5 minutes, or until gelatin is dissolved.

5Remove from heat.

6Add hot mixture into eggs a little at a time.

7Return all to the pan, stirring constantly.

8Cook and stir over medium heat, until a thermometer reads 160F.

9DO NOT BOIL!

10remove from heat.

11Stir in almond extract.

12Pour into dessert dishes.

13Refrigerate until set.

14Add garnish if desired.
