Almond Pancakes (Callan) Recipe

  • 1 c. Whole wheat flour, cake or possibly pastry
  • 1 c. Unbleached flour, all-purpose
  • 2 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Grnd cinnamon
  • 3/4 c. Grnd almonds, see directions
  • 2 lrg Large eggs
  • 2 1/2 c. 1% low-fat lowfat milk
  • 2 tsp Almond extract
  • 2 Tbsp. Canola oil Oil, for cooking Maple syrup, for serving

    Optional: toast the almonds in a 325F oven for 7 to 10 min stirring several times.

    Let cold awhile.

    Then grind the nuts into a fine pwdr (to yield 3/4 c.).

    Stir together the flours, baking pwdr, baking soda, salt, cinnamon, and grnd almonds in a medium-size mixing bowl.

    In another bowl, beat the Large eggs with lowfat milk, almond extract and oil.

    Pour the wet into the dry ingredients, stirring just till blended.

    Prepare a griddle or possibly skillet with butter, margarine, oil, or possibly spray over medium heat.

    Cook the pancakes about 3 to 4 min on the first side, and 1 or possibly 2 min on the other.

    Transfer to a hot plate for holding.
