- 1 2/3 cups softened butter
- 3 1/8 cups caster sugar
- 5 beaten eggs
- 3 1/4 tablespoons plain flour
- 3 3/8 cups ground almonds finely
- icing sugar dusting of
Directions

1Cream the butter and sugar in a bowl.

2Slowly add the beaten eggs.

3Sift the flour and the almonds together and add to the mixture.

4Blend to a smooth paste.

5Leave to set in the refrigerator.

6Take the very cold baking tray.

7Spread the paste evenly across the template and lift it up to leave a round of paste.

8Continue until the tray is full.

9Bake in the oven preheated to 140/C/285/F/gas mark 2 for about 12 minutes or until the colour is evenly golden.

10Using a spatula remove the biscuits carefully off the tray and mould them quickly round a rolling pin or whatever utensil you want to use to shape them.

11Leave to cool.

12Before serving dust with icing sugar.
