Ingredients

  • 5 lb chicken
  • 1/4 tsp paprika
  • 1/4 cup pineapple juice
  • 3 clove garlic
  • 1/2 cup red pepper, chopped
  • 1/2 cup green pepper, chopped
  • 1 cup pineapple, chopped
  • 1 cup chicken stock
  • 1 cup pineapple preserves
  • 1/4 cup pineapple juice
  • 1 tbsp lime juice
  • 1/2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/4 tsp ground ginger
  • 1 pinch cayenne pepper
  • 1 tbsp cilantro, chopped

Directions

    preheat oven to 350F.

    season chicken inside & out with salt, pepper, & paprika.

    fill roaster with pineapple juice, chicken stock & garlic cloves, then place chicken on top.

    roast for 45 minutes.

    to prepare the glaze, add preserves, juices, Brown sugar, soy sauce, ginger, & cayenne to a sauce pan over low heat.

    whisk the ingredients until well incorporated, about 5 minutes.

    the consistency should he thick.

    whisk in cilantro just before glazing.

    after 45 minutes, remove roaster from oven.

    fill roaster with peppers & pineapple.

    brush the glaze onto chicken & place back in oven for 20 minutes until skin is golden Brown.

    allow 4-5 minutes to cool.

    remove chicken & serve with peppers & pineapple chicken
