  • FOR THE COOKIES:
  • 1/3 cups Butter
  • 1/2 cups White Sugar
  • 1 whole Egg
  • 1-1/2 cup All-purpose Flour
  • 1/4 teaspoons Baking Soda
  • 1/8 teaspoons Salt
  • 1 can (8 Oz. Can) Crushed Pineapple, Drained
  • 1/2 cups Macadamia Nuts, Chopped
  • 1/2 cups Flaked Coconut

  • FOR THE GLAZE:
  • 1 cup Powdered Sugar
  • 2 Tablespoons Milk
  • 1 cup Flaked Coconut

Directions

    Preheat oven to 350°F.

    In a large bowl, beat butter and sugar and egg until fluffy.

    Combine flour, soda and salt. Beat into the sugar/butter mixture, alternating with the pineapple. Once all ingredients are incorporated, stir in nuts and coconut.

    Drop by teaspoonfuls onto a greased cookie sheet. Bake 10-12 minutes until golden brown.

    Prepare the glaze in a small bowl. Whisk together the powdered sugar and milk. Put the coconut into another small bowl.

    While the cookies are still warm, dip the tops into the glaze and then press into the coconut. Place on a rack to cool completely.
