Ingredients

  • 1 c. margarine
  • 1 c. ripe banana
  • 2 c. sugar
  • 4 eggs
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1 (20 oz.) can crushed pineapple
  • 1 c. shredded coconut
  • 4 c. sifted flour
  • 1 c. chopped Macadamia nuts (optional)

Directions

    Cream the margarine and sugar until light and fluffy. Add eggs and mix well.

    Stir in bananas.

    Sift together flour, baking powder, baking soda and salt. Add to creamed mixture and mix well. Fold in undrained pineapple, coconut and nuts.

    Pour into greased and floured 9 x 5-inch loaf pans and bake at 350° for 1 hour and 10 minutes or until tests done. Remove from pans to cool.

    Makes 2 loaves.
