Alphabet Chicken Soup

  • 3 to 4 lb. stewing chicken, cut up
  • 1/4 tsp. poultry seasoning
  • 1 2/3 c. American Beauty alphabets
  • 1 1/3 c. carrots, sliced
  • 1 c. celery, finely chopped
  • 1/4 c. onion, chopped
  • 3 qt. water
  • 1 Tbsp. salt
  • 6 peppercorns
  • salt
  • pepper

Directions

    In 6 to 8-quart Dutch oven, combine chicken, water, 1 tablespoon salt, peppercorns and poultry seasoning.

    Bring to boil.

    Cover and cook over low heat for one hour or until chicken is tender.

    Remove chicken and peppercorns.

    Skim off fat.

    Cut meat from bones and return to soup.

    Add alphabets, carrots, celery and onion.

    Cook, covered, 20 to 30 minutes or until alphabets are tender.

    Season with salt and pepper.
