- 180 grams baking flour
- 180 grams sugar
- 200 grams coconut, grated
- 60 grams butter
- 15 grams baking powder
- 150 ml warm fresh milk
- 1 egg
- 1 grated rind of 1 lemon
- 1 icing sugar
Directions

1Sift dry ingredients together.

2Cream butter, adding sugar gradually, creaming well.

3Add unbeaten egg.

4Combine warm milk and grated rind of lemon.

5Add alternately with the dry ingredients to creamed mixture.

6Blend well after each addition.

7Fold in grated coconut, mixing thoroughly until well blended.

8Pour into a loaf tin, well greased.

9Bake at 180AC for 45 minutes.

10Cool.

11Cover with icing sugar, if desired.
