Ingredients

  • 180 grams baking flour
  • 180 grams sugar
  • 200 grams coconut, grated
  • 60 grams butter
  • 15 grams baking powder
  • 150 ml warm fresh milk
  • 1 egg
  • 1 grated rind of 1 lemon
  • 1 icing sugar

Directions

    Sift dry ingredients together.

    Cream butter, adding sugar gradually, creaming well.

    Add unbeaten egg.

    Combine warm milk and grated rind of lemon.

    Add alternately with the dry ingredients to creamed mixture.

    Blend well after each addition.

    Fold in grated coconut, mixing thoroughly until well blended.

    Pour into a loaf tin, well greased.

    Bake at 180AC for 45 minutes.

    Cool.
