  • 12 oz. Monterey Jack cheese
  • 12 oz. Cheddar cheese
  • 2 (28 oz.) cans Las Palmas red chile sauce (not enchilada)
  • 2 to 3 doz. corn tortillas
  • 1 large sour cream
  • 1 to 2 onions (to taste)
  • 1 bunch green onions
  • 4 tomatoes
  • 2 cans olives
  • shredded chicken, beef or ground beef (optional)

    Grate both cheeses. Set aside a little for sprinkling on top. Chop the onions, green onions, tomatoes and olives; set aside.
