  • 2 teaspoons Vanilla Extract
  • 14 ounces, weight Shredded Coconut (one Package)
  • 1 can Sweetened, Condensed Milk - 14-ounce Can
  • 2 Tablespoons All-purpose Flour

    1. Preheat oven to 350F. Line cookie sheet with parchment paper.

    2. Combine all ingredients in bowl. Stir until all mixed up!

    3. Drop rounded teaspoons of coconut mixture on cookie sheet, about an inch apart.

    4. Bake 10-12 minutes - it will flatten out and edges will turn golden brown. Just don't let it go too long - they will burn easily if you aren't careful!

    5. Cool for a few minutes and move to cooling rack.

    6. Enjoy! These should be lightly crisp on the sides and chewy in the middle.

    *For a little extra fun drizzle with melted chocolate or add some chopped nuts to batter!
