- 1 pkg. dry yeast
- 2 Tbsp. warm water (105~ to 115~)
- 2 c. buttermilk
- 5 c. all-purpose flour
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1/4 c. sugar
- 1 c. shortening
Directions

1Dissolve yeast in warm water; let stand 5 minutes.

2Stir in buttermilk and set aside.

3Combine flour and next 3 ingredients; cut in shortening with pastry blender until mixture is crumbly. Make a well in center of mixture; add reserved yeast mixture and stir just until dry ingredients are moistened.

4Turn dough out onto a lightly floured surface and knead lightly 3 or

54 times. Roll dough to 1/2-inch thickness; cut with a 2-inch biscuit cutter.

6Place on lightly greased baking sheets.

7Cover and let rise in a warm place (85°), free from drafts, 30 minutes.

8Bake at 400° for 10 to 12 minutes or until biscuits are lightly browned. Yield:
