  • 1/2 cup strawberry soda diet
  • 1 1/2 teaspoons almond extract
  • 7 ounces flaked coconut

    Cover cookie sheet with foil (use new foil for each batch).

    Mix together cake mix, soda and extract for 1 minute.

    Beat on medium speed 1 minute longer.

    Fold in coconut.

    Drop by level tablespoons on cookie sheet.

    Bake 350 degrees for 10 to 12 minutes.

    Remove to cooling rack while still hot.
