- 1 1/4 c. sifted Swans Down cake flour
- 1/2 c. sugar
- 1 1/2 c. egg whites (approximately 12) at room temperature
- 1 1/4 tsp. cream of tartar
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1/4 tsp. almond extract
- 1 1/3 c. sugar
Directions

1Measure sifted flour and add 1/2 cup sugar and sift 4 times. Combine egg whites, cream of tartar and flavorings in large bowl. Beat at high speed of electric mixer or rotary beater until soft peaks form.

2Add rest of sugar in 4 additions, beating until blended.

3Sift in flour mixture in 4 additions folding in with large spoon.

4Turn bowl often.

5Pour into ungreased 10-inch tube pan.

6Bake at 375° for 30 to 40 minutes.

7Cool upside-down in pan on cake rack.

8Loosen from sides and remove.
