  • 2 eggs whites
  • 2/3 c. sugar
  • 1 c. chopped walnuts
  • 1 tsp. vanilla
  • 4 egg yolks
  • 1/2 c. sugar
  • juice and rind of 1 lemon
  • 1 Tbsp. water
  • 1/2 pt. heavy cream
  • cherries for topping

Directions

    Beat egg whites until creamy.

    Add 2/3 cup sugar gradually. Beat until peaks form, fold in walnuts (optional) and vanilla. Drop by the tablespoon on foil covered cookie sheet, forming a well for filling.

    Bake at 350° for 10 minutes, then turn off oven and do not open for at least 8 hours.

    Makes 6 to 8 meringues.
