Annapolis Crab Cakes

  • 2 eggs, beaten
  • 1/4 c. olive oil
  • 1/4 c. cream or half & half
  • 1 finely minced shallot
  • 2 T. capers, finely minced (preserved in salt, not brine)
  • 1 T. worcestershire sauce
  • 1 t. Old Bay seasoning
  • 1/2 t. cumin
  • 1/2 t. salt
  • 1/2 T. cayenne pepper
  • 1/4 t. dill
  • 1 cup panko bread crumps
  • 1 lb. lump crabmeat (picked through for shells & cartilage)
  • Oil for sauteing

Directions

    Combine all ingredients in a bowl. Form into cakes. Saute in olive oil until golden and crisp, turning only once.
