  • 3/4 c. canola margarine or 1/4 c. baby food prunes and 1/2 c. canola
  • 1 1/2 c. sugar
  • 1 1/2 tsp. vanilla
  • 3/4 c. flour
  • 1/2 c. cocoa
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 2 egg whites, beaten frothy

Directions

    In a large bowl, mix margarine, sugar and vanilla.

    In smaller bowl, mix flour, cocoa, salt and baking powder.

    Pour second bowl into large bowl.

    Fold in egg whites.

    Spray an 8-inch pan or loaf pan.

    Bake at 280° for 45 minutes.
