- 3 tomatoes sliced
- 3 tablespoons olive oil
- 1 teaspoon basil chopped, or spring onion tops
- 1 salt and pepper
- 1 fennel bulb
- 1 teaspoon lemon juice
- 1 garlic crushed
- 6 salami slcs italian
- 6 garlic sausage slcs
- 6 tablespoons black olives drained
- 2 hard boiled eggs quartered
- basil or parsley sprigs to garnish
Directions

1Arrange the tomato at one end of a large oval dish and sprinkle with 1 tablespoon of the oil the basil or spring onion tops and salt and pepper to taste.

2Trim the fennel cut downwards into thin slices then into strips.

3Mix the remaining oil with the lemon juice garlic and salt and pepper to taste.

4Add the fennel and toss well.

5Pile at the other end of the dish.

6Arrange the salami and garlic sausage in the middle of the dish.

7Top with the olives and surround with the egg.

8Garnish with basil or parsley.
