Anytime Spinach Bites

Ingredients

  • 2 (10 oz.) pkg. frozen, chopped spinach
  • 1 Tbsp. dried minced onion
  • 3 Tbsp. butter or margarine
  • 1 c. herb seasoned stuffing mix
  • 1 c. grated Parmesan cheese
  • 2 to 4 drops Tabasco sauce (optional)
  • 1/4 tsp. sage (optional)
  • 2 eggs, beaten

Directions

    Cook spinach and dried onion until spinach is totally defrosted; drain well.

    Mix warm spinach and butter until butter is melted.

    Add stuffing, cheese, Tabasco and sage.

    Mix well. Stir in eggs.

    Shape into 1-inch balls.

    (May be frozen up to 4 months.)

    Cook frozen bites on a greased baking sheet for 15 to 20 minutes in a 375° oven.

    Bake thawed bites for 6 to 8 minutes.
