  • 2/3 c. WATER, BOILING
  • 1 c. APRICOT, DICED
  • 2 c. FLOUR, ALL-PURPOSE
  • 2 1/2 tsp BAKING Pwdr
  • 1/4 tsp BAKING SODA
  • 1/2 tsp SALT
  • 1/2 tsp ALLSPICE Lowfat milk
  • 1/2 c. SHORTENING
  • 3/4 c. SUGAR EGG, BEATEN
  • 1 c. APPLE, Minced
  • 3/4 c. WALNUTS, Minced

Directions

    Pour boiling water over dry apricots and let stand.

    Sift flour, baking pwdr, soda, salt and allspice.

    Add in lowfat milk to apricot juice to make 2/3 c. Beat the shortening adding sugar gradually.

    Beat in the egg.

    Add in dry ingredients alternately with the liquid.

    Mix in the fruit and walnuts.

    Spoon into a greased and floured pan, 9x5.

    Bake in 350F oven for 1 hour.
