- 2 cups Whole Wheat Pastry Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- 1 teaspoon Salt
- 1-1/2 cup Milk
- 2 whole Eggs, Beaten
- 1 teaspoon Vanilla Extract
- 1 Tablespoon Canola Oil
- 4 slices Bacon, Fried And Crumbled
- 1 whole Gala Apple, Grated
Directions

1In a bowl, mix flour, baking powder, cinnamon and salt together. Add milk, eggs, vanilla and oil and stir until smooth. Fold in half the bacon and all of the apple shreds.

2Heat skillet or griddle on medium heat. Add batter 1/4 cup at a time (this creates about a 3-4 inch pancake). Wait until bubbles form, then flip and cook about another 30-60 seconds.

3Garnish with remaining bacon and maple syrup.
