  • 1/2 lb. bacon
  • 1 head romaine, torn into pieces
  • 3 red apples
  • 2/3 c. garlic oil*
  • 1/2 c. Parmesan cheese
  • 2 tsp. lemon juice
  • 1 bunch scallions, trimmed and sliced
  • 1 c. croutons
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • 1 1/2 c. quick-cooking brown rice
  • 1 c. sliced green beans
  • 2 c. tiny broccoli florets
  • 1 Tbsp. vegetable oil
  • 1 garlic clove, pressed
  • 1 (8 oz.) whole boneless skinless chicken breast, cut in 1/4-inch pieces
  • 1/4 c. reduced-sodium soy sauce
  • 1/2 tsp. grated orange zest
  • 2 Tbsp. orange juice
  • 1 tsp. honey
  • 2 medium carrots, shredded
  • 1/2 c. chopped red pepper
  • 2 green onions, sliced

Directions

    Prepare rice according to directions on package.

    Meanwhile, heat water to boiling in a medium saucepan.

    Add green beans and cook 2 minutes over high heat.

    Add broccoli and cook 1 to 2 minutes more, until vegetables are tender crisp.

    Drain and rinse under cold water.

    In medium skillet, heat oil over medium-high heat.

    Add garlic and cook 30 seconds, then add chicken and cook, stirring frequently, 3 to 4 minutes until chicken is no longer pink.

    Remove from heat and add soy sauce, orange zest, orange juice and honey; toss to coat chicken.

    In large bowl, combine cooked rice, broccoli, green beans and chicken mixture.

    Stir in carrots, red pepper and green onions; toss to coat.
