Ingredients
- vegetable cooking spray
- 2 c. sugar
- 1 c. oil
- 3 eggs
- 3 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 2 tsp. vanilla extract
- 2 c. chopped, peeled baking apples
- 1 c. chopped pecans
Directions

1Preheat oven to 325°.

2Spray 2 loaf pans with vegetable cooking spray.

3In a large bowl, using an electric mixer, beat together the sugar, oil and eggs.

4In a separate bowl, stir together dry ingredients.

5Add dry mixture to batter; mix just until blended.

6Stir vanilla, apples and pecans into batter.

7Pour batter into prepared loaf pans.

8Bake for 1 hour, or until inserted knife comes out clean.

9Yields 2 loaves, 16 servings each.
