  • 1 c. butter
  • 2 c. sugar
  • 3 eggs
  • 3 c. sifted flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 tsp. vanilla extract
  • 3 c. peeled, chopped apples
  • 2 c. chopped walnuts

    Combine butter and sugar in a large mixing bowl.

    Cream until smooth.

    Add eggs, one at a time.

    Beat well.

    Sift together the flour, baking soda, salt and spices.

    Add to creamed mixture.

    Stir in vanilla.

    Add chopped apples and nuts (batter will be very stiff).

    Spread batter evenly in a Bundt pan.

    (If using a Teflon coated Bundt pan, spray lightly with vegetable spray.)

    Bake at 325° for 1 hour (or until top of cake is golden brown and springs back when touched lightly).
