  • 2 c. sugar
  • 1/4 c. orange juice
  • 1 c. vegetable oil (I use Crisco oil)
  • 2 1/2 tsp. vanilla
  • 4 eggs
  • 3 c. plain flour (Red Band)
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. peeled and chopped apples
  • 1 tsp. cinnamon
  • 1 c. chopped pecan nuts

    Peel apples and pour 1/2 cup sugar over apples; set aside. Sift flour, salt, baking powder and cinnamon; set aside.

    Cream oil and 2 cups sugar.

    Add eggs, one at a time, cream well.

    Add vanilla, mix.

    Add flour mixture.

    Fold in nuts and apples, mix well.

    Pour in well-greased and floured large tube pan.

    Bake in oven at 350° for 50 to 60 minutes.

    Cool for 10 minutes.
