Ingredients: 1/2 C benecol or butter or margrn; 1 C Sugr or 3/4 C honey; 2 eggs or egg beaters; 1/4 tsp vanilla; 1 1/4 C flour; 1 tsp baking soda ( add 1/4 tsp more if using honey); 1 tsp cinamon; 1/2 tsp nutmeg; 1/4 tsp salt; 1 1/2 C shredded peeled apples; 1/2 C chopd nuts

round cake pan oiled & dusted

beat butr & honey well, beat in eggs one at a time- stir in the rest and spoon n2 pan.

cool 10 min - put on rack 10 min. serve w/ ice cream or s\whipped cream
