Ingredients
- 1 3/4 c. all-purpose flour
- 1/2 lb. apples, cored, pared and finely chopped
- 1/2 c. rye flour
- 1/4 c. Cheddar cheese, shredded
- 1/4 c. sugar
- 2 Tbsp. dark raisins
- 2 Tbsp. baking powder
- 1/4 tsp. allspice or cinnamon
- 1/2 c. skim milk
- 1/3 c. plus 2 tsp. margarine
- 1/4 c. egg substitute
Directions

1Preheat oven to 375°.

2Combine first 9 ingredients in a medium mixing bowl.

3Stir to combine and set aside.

4In blender, combine remaining ingredients and process until smooth.

5Pour into dry ingredients and stir until moistened (do not beat or overmix). Prepare muffin pan.

6Fill each cup with an equal amount of batter (each will be about 3/4 full).

7Bake in middle of center oven rack for 20 minutes.

8Cool and serve.

9Great for breakfast or as part of a light lunch.
