  • 2 boneless chicken breasts
  • salt, pepper and flour
  • 1 Tbsp. butter
  • 2 tsp. oil
  • 2 Tbsp. Calvados (apple brandy)
  • 1/2 c. cider
  • 2 apples, peeled, cored and cut in eighths
  • 1/2 tsp. thyme
  • 3 Tbsp. cream

Directions

    Season chicken with salt and pepper.

    Dredge in flour and fry over moderate heat in butter and oil, until brown all over.

    Add Calvados and carefully ignite with a match.
