- 12 cup chopped onion
- 14 cup red wine vinegar
- 14 cup brown sugar
- 1 tablespoon grated orange peel
- 1 tablespoon grated fresh ginger
- 12 teaspoon allspice
Directions

1Combine all ingredients in a medium saucepan and stir well.

2Bring to a boil; reduce heat and simmer, covered, for 50 minutes.

3Uncover and simmer over low heat for a few minutes more to cook off excess liquid; let cool.
