  • 1-1/2 cups flour
  • 1-1/2 tsp. CALUMET Baking Powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. baking soda
  • 1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
  • 1 Granny Smith apple, finely chopped
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup oil
  • 1 egg
  • 1 tsp. vanilla

Directions

    Mix flour, baking powder, salt, cinnamon and baking soda; set aside.

    Mix remaining ingredients in medium bowl.

    Add flour mixture; stir just until moistened.

    Spoon into greased or paper-lined muffin pan, filling each cup 2/3 full.

    Bake at 400F for 25 minutes or until golden brown.
