- 1-1/2 tsp. CALUMET Baking Powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. baking soda
- 1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1 Granny Smith apple, finely chopped
- 1/2 cup firmly packed brown sugar
- 1/4 cup oil
- 1 egg
- 1 tsp. vanilla
Directions

1Mix flour, baking powder, salt, cinnamon and baking soda; set aside.

2Mix remaining ingredients in medium bowl.

3Add flour mixture; stir just until moistened.

4Spoon into greased or paper-lined muffin pan, filling each cup 2/3 full.

5Bake at 400F for 25 minutes or until golden brown.
