Apple Cinnamon "Pizzas"

  • 2 apples peeled, cored, thinly sliced
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 3 1/2 tablespoons butter melted
  • powdered sugar for dusting
  • vanilla ice cream to serve
  • 1 tablespoon active dry yeast
  • 1 teaspoon granulated sugar
  • 1/2 cup all purpose flour

Directions

    To make the dough, combine 1 cup lukewarm water, yeast and sugar. Set aside in warm place for 10 mins, until mixture is frothy. Sift together flour and 1 tsp salt. Add yeast mixture then knead on a lightly floured work surface for 5-10 mins, until smooth and elastic.

    Transfer to a large, oiled bowl, cover with plastic wrap and set aside in a warm place for 1 hour, or until dough doubles in size. Knead into a smooth ball then divide into 8 pieces.

    Preheat oven to 400°F. Lightly grease 2 baking trays. Roll each portion of dough into a 4 inch disc. Place on prepared trays. Arrange apples over top and sprinkle with sugar and cinnamon. Drizzle with butter and bake for 25-30 mins, until golden. Dust with powdered sugar and serve with ice cream.
