- 2 eggs
- 6 3/8 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 7 tablespoons butter at room temperature
- 2 1/16 cups flour
- 1 teaspoon baking powder
- 3 peeled apples cored, and cut into small pieces
- powdered sugar for sprinkling
- cinnamon for sprinkling
Directions

1Preheat oven at 200 degrees Celsius.

2Prepare a non-sticking baking tray.

3Beat the eggs with the sugar and the vanilla extract until you get a whitish mixture.

4Add the butter and beat again.

5Add the flour and baking powder, and mix well.

6Add the apples, and mix well. The apple should be evenly distributed in the dough.

7Spoon onto the baking tray with 2 to 3 centimeter spaces between the cookies.

8Bake for about 10 minutes, making sure that it doesn't get dry.

9Remove from oven, and cool on a rack. When cooled, sprinkle abundantly with powdered sugar and cinnamon.
