  • 2 Tbsp. sugar
  • 1 c. finely chopped apples
  • 1 egg
  • 2/3 c. water or milk

    Heat oven to 400°.

    Grease round layer pan, 9 x 1 1/2-inches or square pan, 8 x 8 x 2-inches.

    Prepare topping.

    Mix baking mix, sugar, egg and water.

    Beat vigorously 30 seconds.

    Stir in apples.

    Spread batter in pan. Sprinkle with topping. Bake until wooden pick inserted in center comes out clean, 20 to 25 minutes. Refrigerate any remaining coffee cake.
