Apple-Cornmeal Dressing

Ingredients

  • 1 1/2 cups chopped onion
  • 1 cup chopped celery
  • 3/4 cup butter
  • 3 cups chopped, peeled tart apples
  • 1 cup chopped walnuts
  • 1 1/2 cups raisins
  • 6 cups stale, cubed corn bread
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground sage
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground ginger
  • 1/2 cup stock, milk or water (approximately)

Directions

    Sautee onion and celery in butter until soft.

    Add apples and saute another two to three minutes.

    Add remaining ingredients except for liquid and cook for several minutes.

    Taste for seasoning.

    Add just enough of the liquid to moisten the mixture.

    Dressing should be somewhat dry as the apples will moisten it further as it cooks.
