"Apple" Crisp

- 10 c. sliced zucchini (big ones are best)
- 2 tsp. cream of tartar
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 4 tsp. lemon juice
- 3/4 c. sugar
Directions

1Peel zucchini, cut in half lengthwise and remove seeds.

2Cut each piece again in thirds lengthwise.

3Slice each of these pieces into 1/4 inch slices which should resemble the shape and size of sliced apples.

4Measure 10 cups of zucchini slices and cook, covered in 3/4 cup water, over medium heat until just transparent, 10 to 15 minutes.

5Stir occasionally and do not overcook.

6Drain and cool. Combine cream of tartar, cinnamon, salt, lemon juice and sugar. Add to zucchini and stir.

7Place in 7 x 11 pan.
