Apple Ginger Jam Recipe

- 1 2/5 kg apples, Granny Smith
- 600 ml water
- 2 x lemons
- 1 tsp grnd ginger
- 1 2/5 kg sugar (caster)
- 125 gm ginger, glace
Directions

1Peel, core and thinly slice the apples.

2Grate peel and juice lemons.

3In a large saucepan simmer apples, water, lemon peel and juice and grnd ginger till apples are soft.

4Add in sugar, stir till sugar dissolves.

5Increase heat, boil rapidly 15-20 min or possibly till jam reaches 105C.

6Remove from heat and stir in minced glace ginger.

7Remove scum.
-
8Cold for 5 min.

9Ladle into warm jars and seal.

10Makes 2 litres.

11Keeps for 3-4 months.

12Ensure storage jars are well sterilised.
