Apple Ginger Jam Recipe

Ingredients

  • 1 2/5 kg apples, Granny Smith
  • 600 ml water
  • 2 x lemons
  • 1 tsp grnd ginger
  • 1 2/5 kg sugar (caster)
  • 125 gm ginger, glace

Directions

    Peel, core and thinly slice the apples.

    Grate peel and juice lemons.
  3. 3
    In a large saucepan simmer apples, water, lemon peel and juice and grnd ginger till apples are soft.

    Add in sugar, stir till sugar dissolves.

    Increase heat, boil rapidly 15-20 min or possibly till jam reaches 105C.

    Remove from heat and stir in minced glace ginger.

    Remove scum.

    Cold for 5 min.

    Ladle into warm jars and seal.

    Makes 2 litres.

    Keeps for 3-4 months.

    Ensure storage jars are well sterilised.
