- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon (or Penzeys Cake Spice)
- 14 teaspoon baking powder
- 3 eggs
- 3 cups granny smith apples, shredded
- 2 cups sugar
- 23 cup vegetable oil
- 1 12 teaspoons vanilla extract
Directions

1Preheat oven to 325F.

2Grease and flour two 8x4x2 in loaf pans.

3In a bowl, combine flour, soda, salt, cinnamon, and baking powder.

4In a separate, larger bowl, combine eggs, apples, sugar, oil, and vanilla.

5Stir in flour mixture just until moistened.

6Pour batter into prepared pans.

7Bake for 1 hour or until toothpick inserted in centre of loaf comes out clean.

8Cool in pans for 10 minutes.

9Remove and cool on wire racks.
