  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon (or Penzeys Cake Spice)
  • 14 teaspoon baking powder
  • 3 eggs
  • 3 cups granny smith apples, shredded
  • 2 cups sugar
  • 23 cup vegetable oil
  • 1 12 teaspoons vanilla extract

Directions

    Preheat oven to 325F.

    Grease and flour two 8x4x2 in loaf pans.

    In a bowl, combine flour, soda, salt, cinnamon, and baking powder.

    In a separate, larger bowl, combine eggs, apples, sugar, oil, and vanilla.

    Stir in flour mixture just until moistened.

    Pour batter into prepared pans.

    Bake for 1 hour or until toothpick inserted in centre of loaf comes out clean.

    Cool in pans for 10 minutes.

    Remove and cool on wire racks.
