Ingredients: 1 1/2 c. oil; 1 1/2 c. sugar; 1/2 c. firmly packed brown sugar; 3 eggs; 3 c. all-purpose flour; 2 tsp. cinnamon; 1 tsp. baking soda; 1/2 tsp. freshly grated nutmeg; 1/2 tsp. salt; 3 1/2 c. peeled tart apples, cut into large pieces (I use Cortland apples); 1 c. coarsely chopped walnuts; 2 tsp. vanilla; Glaze
