  • 1 1/2 C. vegetable oil
  • 1 1/2 C. sugar
  • 1/2 C. firmly packed brown sugar
  • 3 large eggs
  • 2 1/2 C. flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 3 1/2 C. diced cooking apples (3 lg.)
  • 1 C. chopped pecans (lg. pieces)

    Preheat oven at 325 degrees.

    Blend oil, sugar, brown sugar together.

    Add eggs 1 at a time into sugar mixture.

    Add vanilla. Fold in apples and nuts.

    Cook 50 minutes to 1 hour.
