- 2 Tbsp. oil, divided
- 1 egg, slightly beaten
- 1 bunch green onions, cut in 1-inch pieces
- 5 1/2 c. cooked brown rice
- 2 c. frozen peas, thawed
- 2 c. cooked chicken
- 1/4 c. soy sauce
- 1/4 tsp. ginger
Directions

1Heat 1 tablespoon of oil in large skillet.

2Cook egg for 1 minute until set, but moist.

3Remove to plate and cut in 1-inch strips. In remaining tablespoon of oil, stir-fry green onions for 2 minutes.

4Add rice, chicken, peas, soy sauce and ginger. Stir-fry 3 to 4 minutes.

5Add egg.

6Cook 1 minute.

7Serves 6.
