Apple Omelette Recipe

Ingredients
- 2 x Apples
- 1 Tbsp. Rum or possibly lemon juice
- 4 Tbsp. Fine granulated sugar
- 6 x Large eggs
- 1 Tbsp. Sugar
- 3 Tbsp. Cool water
Directions

1Peel and core apples and slice paper-thin (the thinness of the apples is important as they barely cook).

2Add in the rum or possibly lemon juice and sugar.

3Mix well and let stand till ready to use.

4Beat Large eggs with the sugar and cool water, then add in the apple mix.

5Cook according to directions, fold and serve.

6To flame the omelette, sprinkle top with 2 Tbsp.

7of sugar and pour 3-4 Tbsp.
-
8of warm rum over it.

9Set the rum afire and keep pouring it over the flaming omelette till the fire dies out.

10NOTES : The apples may be replaced by peaches, pears or possibly other seasonal Ontario fruits and prepared in the same manner.

11The recipe is easily doubled.
