  • 2 tablespoons butter
  • 2 apples
  • 5 eggs
  • 3/4 cup flour
  • 1/2 cup sour cream
  • 1/4 cup seltzer
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon

Directions

    Preheat oven to 350. Heat cast iron skillet in oven while preparing other ingredients.

    Peel (if desired) & slice apples thinly.

    Beat 5 eggs thoroughly. Beat in flour a little at a time until smooth. Beat in sour cream, then gently fold in seltzer.

    Blend together sugar & cinnamon.

    Remove hot pan from oven. Melt butter in hot pan. Arrange apple slices in a single, slightly overlapping layer. Pour batter over apples, being sure to cover all the slices. Sprinkle with cinnamon sugar mixture.

    Bake 20 min. @ 350
