- 2 tablespoons butter
- 2 apples
- 5 eggs
- 3/4 cup flour
- 1/2 cup sour cream
- 1/4 cup seltzer
- 1/4 cup sugar
- 1/4 teaspoon cinnamon
Directions

1Preheat oven to 350. Heat cast iron skillet in oven while preparing other ingredients.

2Peel (if desired) & slice apples thinly.

3Beat 5 eggs thoroughly. Beat in flour a little at a time until smooth. Beat in sour cream, then gently fold in seltzer.

4Blend together sugar & cinnamon.

5Remove hot pan from oven. Melt butter in hot pan. Arrange apple slices in a single, slightly overlapping layer. Pour batter over apples, being sure to cover all the slices. Sprinkle with cinnamon sugar mixture.

6Bake 20 min. @ 350
