  • 23 cup flour, all-purpose
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 2 large eggs beaten
  • 1 cup milk, low-fat
  • 2 cups apples slices
  • 2 tablespoons butter or margarine, plus more for cooking
  • 2 tablespoons sugar
  • 1/4 teaspoon cinnamon

    Sift together the flour, 2 teaspoon sugar and the salt.

    Beat eggs and milk together.

    Gradually add flour mixtu, beat until smooth.

    Saute apples in 2 tablespoons of butter until tender.

    Mix 2 tablespoon sugar and the cinnamon together.

    Toss with apples.

    Melt a bit butter in a 8-inch diameter nonstick skillet over medium to medium-low heat.

    Pour in 1/4 cup batter, give a swirl to ensure the batter covers the pan completely and evenly.

    When set spread 1/4 of the apples evenly on top, swirl in another 1/4 cup of batter.

    Cook the pancake until lightly browned, about 3 minutes.

    Flip it over, and cook the other side for another 2 to 3 minutes until browned.

    Keep warm on a baking sheet in a 200 degrees F oven.
