  • 2 cups apples, shredded
  • 2 cups pears, shredded
  • 2 cups sugar
  • 1 14 cups vegetable oil
  • 1 cup raisins
  • 1 cup pecans, chopped
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 12 teaspoon nutmeg
  • 12 teaspoon salt
  • 3 ounces cream cheese, softened
  • 14 cup butter, softened
  • 3 cups confectioners' sugar
  • 2 tablespoons milk
  • 12 teaspoon vanilla

Directions

    In a large bowl combine the first eight (8) ingredients.

    Combine dry ingredients; stir into fruit mixture.

    Pour into greased 13x9-inch baking pan.

    Bake at 325F for 1 hour or until a toothpick inserted near the center comes out clean.

    Cool on a wire rack.

    For the frosting, beat cream cheese and butter in a mixing bowl until fluffy.

    Add sugar, milk and vanilla; mix well.

    Spread over cooled cake.
