Apple Pecan Cornbread Dressing

- 1 9x13-inch pan cornbread, cooled and crumbled
- 1 pkg. (8 oz.) herb stuffing mix
- 4 cups seasoned croutons
- 2 tbsp. chopped fresh parsley
- 2 tsp. dried parsley flakes
- 3/4 cup butter
- margarine
- 1 cup celery, chopped
- 1 cup onion, chopped
- 2 apple juice
- 2 apple, chopped
- 3 eggs
- 1/2 cup chopped pecans
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
Directions

1Preheat oven to 350F (175C).

2Butter one 3-quart casserole dish.

3In a large bowl combine the corn bread, stuffing mix, parsley, salt and ginger.

4In a heavy saucepan melt the butter and saute the celery and onion for 8 to 10 minutes or until tender.

5Add this to the cornbread mixture and mix well.

6Stir in the chopped apple, chopped pecans, apple juice and beaten eggs.

7Toss lightly.

8Spoon dressing into the prepared casserole dish.

9Bake at 350F (175C) for 30 to 35 minutes.
