- 2 large eggs
- heaping 1/2 cup sugar
- 1 1/2 cups grated peeled apples, with juice (about two apples)
- 1 1/2 cups whole wheat flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. ground cinnamon
- scant 1/2 tsp. salt
- 5 tbsp. vegetable oil
- 1/2 cup coarsely chopped pecans
Directions

1Preheat oven to 350.

2Beat sugar and eggs in large bowl.

3Stir in apples.

4Let stand for ten minutes.

5Meanwhile, whisk together flour, baking powder, baking soda, cinnamon and salt.

6Stir oil and pecans into apple mixture.

7Add the flour mixture and stir until just combined. Do not overmix; the batter should not be smooth.

8Pour into greased bread pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.

9Let cool before removing from pan.
