- 1 1/2 c. flour
- 1/2 tsp. cinnamon
- 2 Tbsp. frozen vegetable shortening
- 4 medium tart apples, peeled, cored and sliced into 1/4-inch slices
- 3 to 4 Tbsp. ice water
- 1 Tbsp. finely grated lemon zest
- 2/3 c. sugar
- 1 stick frozen unsalted butter, cut in tablespoon size pieces
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
Directions

1In a food processor, combine the flour and 1/4 teaspoon salt. Process for a few seconds, then add 6 tablespoons butter.

2Add shortening and process until the mixture resembles a coarse meal. Sprinkle 3 tablespoons ice water over the mixture and process about 20 seconds.

3Pinch some of the dough between your fingers. If it is dry and does not hold together, add 1 tablespoon more of water and process briefly until dough begins to form a ball.

4Do not overprocess.
