  • 1 1/2 c. flour
  • 1/2 tsp. cinnamon
  • 2 Tbsp. frozen vegetable shortening
  • 4 medium tart apples, peeled, cored and sliced into 1/4-inch slices
  • 3 to 4 Tbsp. ice water
  • 1 Tbsp. finely grated lemon zest
  • 2/3 c. sugar
  • 1 stick frozen unsalted butter, cut in tablespoon size pieces
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt

Directions

    In a food processor, combine the flour and 1/4 teaspoon salt. Process for a few seconds, then add 6 tablespoons butter.

    Add shortening and process until the mixture resembles a coarse meal. Sprinkle 3 tablespoons ice water over the mixture and process about 20 seconds.

    Pinch some of the dough between your fingers. If it is dry and does not hold together, add 1 tablespoon more of water and process briefly until dough begins to form a ball.
