- 1/2 cups Brown Sugar
- 6 Tablespoons All-purpose Flour
- 1/4 cups Unsalted Butter, melted
- 1 teaspoon Ground Cinnamon
- FOR THE MUFFINS:
- 1-1/2 cup Brown Sugar
- 2/3 cups Canola Oil
- 1 Large Egg
- 1 teaspoon Vanilla
- 2-1/2 cups All-purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon
- 1 cup Buttermilk
- 2 cups Diced Apple

11. Preheat oven to 350°F. Grease and flour a 12-cup muffin tin, or line it with paper cups or parchment paper.

22. Make the streusel topping: Combine brown sugar, flour, melted butter and cinnamon in a small bowl and mix until crumbly. Set aside.

33. For the muffins, combine the brown sugar, oil, egg and vanilla in a large bowl. Mix and set aside.

44. Sift together the flour, soda, salt and cinnamon. Blend the flour into the mixture, alternately with the buttermilk. Add the diced apple. Mix until just combined.
