- 2 1/2 c. flour
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 1 c. sugar
- 1/2 c. margarine
- 1/4 c. buttermilk or plain nonfat yogurt
- 8 oz. (1 c.) egg substitute
- 2 medium apples, peeled and diced (2 c.)
- 2 tsp. vanilla
Directions

1Heat oven to 350°.

2Spray a 10-inch tube pan with Pam.

3Mix flour, baking powder and soda until blended.

4In a large bowl, beat sugar, margarine and buttermilk about 4 minutes.

5With a mixer on medium speed, alternately add flour mixture and egg substitute.

6Beat until well blended and fluffy.

7Stir in apples and vanilla.

8Spread in pan.

9Bake 1 hour or until golden brown and a pick inserted in center of cake comes out clean.

10Cool on wire rack 10 minutes.

11Turn out onto rack and cool completely. Dust with confectioners sugar.
